I had a whim to experiment with some cookies. It's a basic English Shortbread dough that I dressed up. I love to experiment in the kitchen and try unexpected flavors or combinations.
Start with scoops of the simple shortbread and press in the centers before baking...
When nearly baked, remove the cookie tray from the oven and fill them with your favorite flavor. I'm a huge fan of lemon curd, so at least one batch of cookies had to lemon!

Perfection! I ended up making lemon meringue, chocolate ganache, and strawberry jam. They definitely have that melt in your mouth quality and were fun to feature at our patio party - they were gone as fast as they were served!
